Ingredients

1 lb Ground Turkey Sausage
3 large Russet Potatoes, sliced into thin rounds
4 cups Fresh Kale, stemmed and chopped
1 cup Yellow Onion, diced
4 cloves Garlic, minced
6 cups Low sodium chicken broth
1 cup Heavy cream
1/2 tsp Crushed red pepper


Instructions

Brown the turkey sausage in a large pot over medium-high heat until fully cooked.
Remove the sausage with a slotted spoon and set aside.
Sauté the onions in the rendered fat until translucent.
Add the minced garlic and cook for one minute.
Pour in the chicken broth and scrape the bottom of the pot to release browned bits.

Return the cooked sausage to the pot.
Stir in the heavy cream and chopped kale.
Simmer for an additional 3-5 minutes until the kale is wilted and the soup is heated through.
