Description
Healthy eggplant lasagna made with roasted eggplant slices, marinara sauce, and creamy cheese layers. A low carb comfort dinner.
Ingredients
2 large eggplants sliced lengthwise
1 tablespoon olive oil
2 cups marinara sauce
1 cup ricotta cheese
1 cup shredded mozzarella
1/2 cup parmesan cheese
1 egg
1 teaspoon oregano
1 teaspoon basil
salt and pepper
Instructions
1. Preheat oven to 375°F.
2. Slice eggplants lengthwise.
3. Brush slices with olive oil.
4. Roast slices 10 minutes until tender.
5. Mix ricotta egg oregano basil salt and pepper.
6. Spread marinara sauce in baking dish.
7. Add layer of eggplant slices.
8. Spread ricotta mixture.
9. Add marinara and mozzarella.
10. Repeat layers.
11. Top with mozzarella and parmesan.
12. Bake 25 minutes until bubbly.
Notes
Roast eggplant first to reduce moisture.
Let lasagna rest before slicing.
